

A traditional style marinara made with our award-winning Whole Peeled tomatoes and our rich tomato paste that also has Italian sausage, cubed zucchini, sliced black olives, bell pepper, and fresh herbs for a hearty sauce that gets your family to eat vegetables – and enjoy them.
Ingredients
- 4 Italian sausage links, sliced
- 3 garlic cloves, sliced
1 (28 ounce) can Redpack® 28 oz Whole Peeled Plum Tomatoes 28 oz, crushed by hand
1 tablespoon Redpack® Tomato Paste Can 6 oz
- 1/4 teaspoon sugar
- 2 tablespoons chopped fresh oregano
- 2 tablespoons chopped fresh parsley
- 2 medium zucchini, cubed
- 1/4 cup sliced black olives
- 1 medium yellow bell pepper, cubed
- 1/4 cup grated Parmesan cheese
- Cooked penne pasta
Instructions
Step one
Heat a large nonstick skillet over medium heat. Add sausage and cook for 3 to 5 minutes, browning on all sides; drain.
Step two
Stir in remaining ingredients except cheese and pasta. Reduce heat to medium low and cover. Cook 10 to 15 minutes, stirring occasionally, until sausage is no longer pink. Check zucchini for desired doneness by sticking a piece with a fork and cook longer if it is not to your liking.
Step three
Sprinkle with cheese; cover and cook until cheese is melted. Serve over pasta.
