Ginger-sesame vinaigrette tops this surprising Asian inspired pasta salad. Full of fresh, crisp vegetables and sweetened with mandarin oranges.
Ingredients
- 2 teaspoons grated ginger root
- 1/3 cup rice vinegar
- 1/4 cup orange juice
- 1/4 cup vegetable oil
- 1 teaspoon toasted sesame oil
- 1 (1 ounce) package dry onion soup mix
- 2 teaspoons sugar
- 1 garlic clove, pressed
- 1 (8 ounce) package bow ties pasta, cooked, drained and cooled
- 1/2 cucumber, peeled, seeded, halved lengthwise and sliced
- 1/2 cup sliced red bell pepper
- 1/2 cup chopped red onion
- 1 carrot, shredded
- 1 (6 ounce) package fresh baby spinach, chopped
- 1 (11.5 ounce) can mandarin orange segments, drained
- 2 cups diced cooked chicken
- 1/2 cup sliced almonds
Instructions
Step one
To make dressing: place ginger, vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar and garlic in a mason jar. Cover and shake to combine. Refrigerate until needed.
Step two
To make salad: place pasta, cucumber, bell pepper, onion, petite diced tomatoes, carrots, spinach, mandarin oranges, chicken and almonds; toss to combine. Pour dressing over salad mixture and toss again to coat evenly. Serve immediately.
