Mandarin Orange and Chicken Pasta Salad

Ginger-sesame vinaigrette tops this surprising Asian inspired pasta salad. Full of fresh, crisp vegetables and sweetened with mandarin oranges.

Ingredients

  • 2 teaspoons grated ginger root
  • 1/3 cup rice vinegar
  • 1/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 teaspoon toasted sesame oil
  • 1 (1 ounce) package dry onion soup mix
  • 2 teaspoons sugar
  • 1 garlic clove, pressed
  • 1 (8 ounce) package bow ties pasta, cooked, drained and cooled
  • 1/2 cucumber, peeled, seeded, halved lengthwise and sliced
  • 1/2 cup sliced red bell pepper
  • 1/2 cup chopped red onion
  • 1 can Redpack Canned Petite Diced Tomatoes 28 oz

  • 1 carrot, shredded
  • 1 (6 ounce) package fresh baby spinach, chopped
  • 1 (11.5 ounce) can mandarin orange segments, drained
  • 2 cups diced cooked chicken
  • 1/2 cup sliced almonds

Instructions

Step one

To make dressing: place ginger, vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar and garlic in a mason jar. Cover and shake to combine. Refrigerate until needed.

Step two

To make salad: place pasta, cucumber, bell pepper, onion, petite diced tomatoes, carrots, spinach, mandarin oranges, chicken and almonds; toss to combine. Pour dressing over salad mixture and toss again to coat evenly. Serve immediately.
