Tomato Bacon Jam

You will fall in love with our Tomato Bacon Jam recipe featuring Red Gold Original Diced Tomatoes + Green Chilies!

Ingredients

  • 1 pound thick cut bacon, cut into pieces*
  • 1 cup onion, chopped
  • 2 cans Red Gold® Original Diced Tomatoes + Green Chilies 10 oz, drained

  • 1/2 teaspoon red pepper flakes
  • 1 cup light brown sugar
  • 1 teaspoon ground dry mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt

Instructions

Step one

In a large skillet over medium-high heat, fry the bacon pieces until fat is rendered and pieces are very crispy.  Remove from heat and drain bacon on a paper towel lined plate. Drain all but 2 tablespoons of bacon grease.

Step two

To the skillet, add the onion and cook for about 6 minutes until onion has softened.

Step three

Add the bacon, drained diced tomatoes, red pepper flakes, brown sugar, dry mustard, apple cider vinegar, and salt.

Step four

Bring mixture up to a gentle boil, then reduce heat to a gentle low boil.

Step five

Continue cooking for 30-45 minutes. Stirring frequently until the mixture is very thick and syrupy.  Remove from heat. 

Step six

This can be served warm or cold.
