Ingredients

  • FOR THE CABBAGE ROLLS
  • 10 large green cabbage leaves
  • 14 ounces extra firm tofu, pressed
  • 3/4 cup cooked brown rice
  • 1/2 cup diced carrots
  • 1/4 cup diced green onions, plus more for garnish
  • 1/2 cup diced onion
  • 1/3 cup diced shiitake mushrooms (or any mushrooms)
  • 1 1/2 tablespoons oyster sauce
  • 1 1/2 tablespoons soy sauce
  • 1/2 teaspoon white pepper
  • 2 large eggs
  • FOR THE TOMATO STEW
  • 1 tablespoon neutral oil (such as avocado oil)
  • 4 garlic cloves, minced
  • 1/4 cup diced onion
  • 2 tablespoons Red Gold Canned Tomato Paste 6 oz

  • 1 can Red Gold Whole Peeled Tomatoes 28 oz
  • 2 teaspoons granulated sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • Chopped green onion, for garnish
  • Sesame seeds, for garnish

Instructions

Step one

Bring a large pot of water to a simmer. Submerge cabbage leaves for 3 minutes, then transfer to a colander to drain.

Step two

In a large bowl, combine tofu, brown rice, carrots, green onions, onion, mushrooms, oyster sauce, soy sauce, white pepper, and eggs. Mix until a cohesive filling forms.

Step three

To assemble, lay a cabbage leaf flat, scoop about ¼ cup of filling inside, and wrap tightly like a burrito. Repeat with remaining leaves.

Step four

For the stew, heat oil in a large saucepan over medium heat. Sauté garlic and onion 1 minute. Add tomato paste; cook 30 seconds more.

Step five

Stir in Red Gold Whole Peeled Tomatoes, sugar, soy sauce, and oyster sauce, crushing the tomatoes with a spatula. Cover and simmer 6 minutes.

Step six

Nestle cabbage rolls into the stew. Reduce heat to low, cover, and simmer 10 minutes. Flip rolls and simmer an additional 10 minutes, until heated through and tender.

Garnish with chopped green onions and sesame seeds before serving.
