Spinach and Tomato Tortellini Soup

This easy Spinach & Tomato Tortellini Soup comes together in less than 30 minutes! It’s packed with tons of flavor and it’s the perfect meal solution for those busy weeknights.  This recipe is definitely one that the entire family will enjoy!   @beautifuleatsandthings   @thefeedfeed

Ingredients

  • 2 Tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 small onion, diced
  • 2 cans Red Gold® Canned Diced Tomatoes 14.5 oz

  • 3 cups vegetable broth
  • 4 cups fresh baby spinach
  • 1 package cheese tortellini, 9 oz
  • Kosher salt and black pepper, to taste
  • grated parmesan cheese, for serving (optional)

Instructions

Step one

In a large pot, heat oil over medium heat.  Add garlic and onion and cook for 1 minute.

Step two

Stir in Red Gold Diced Tomatoes and vegetable broth and bring to a boil.  Reduce heat to low and add spinach and tortellini.  Cover and cook for about 5-6 minutes, just until tortellini are tender.

Step three

Season with salt and pepper to taste.  Serve immediately with parmesan cheese if desired.
