Stir-fried chicken strips, peppers, onions and cheese are simmered in a zesty sauce and wrapped in warm tortillas.
Ingredients
- 2 tablespoons vegetable oil
- 1 pound boneless skinless chicken breast, cut into strips
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 1 medium onion, sliced
- 1 (10.75 ounce) can cream of mushroom soup
2 cans Red Gold® Original Diced Tomatoes + Green Chilies 10 oz, drained
- 8 (8 inch) flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1 (4 ounce) can green chilies
Instructions
Step one
In large skillet heat oil, add chicken and cook until browned. Add bell peppers and onion, cook until crisp tender. Add soup and diced tomatoes; heat through.
Step two
Spoon ½ cup of the chicken mixture down the center of each tortilla. Top with cheese. Fold tortilla around the filling.
