Ingredients

  • GREEN CHILI QUESO
  • 8 ounces cheddar cheese, shredded
  • 4 ounces smoked Gouda cheese, shredded
  • 1 tablespoon cornstarch
  • 1 can evaporated milk
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can Red Gold Original Diced Tomatoes + Green Chilies 10 oz
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

  • 1 pound ground beef (80/20 blend)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 8 Slider buns, toasted
  • Guacamole, for serving
  • Crispy onion straws, for serving

Instructions

Step one

In a medium bowl, toss the shredded cheddar and smoked Gouda with the cornstarch until evenly coated. Set aside.

Step two

In a medium saucepan over medium heat, bring the evaporated milk to a gentle simmer. Reduce heat to low and whisk in the cheese mixture a handful at a time, stirring until smooth and fully melted.

Step three

Whisk in the chili powder, smoked paprika, cayenne pepper, Red Gold Original Diced Tomatoes + Green Chilies, salt, and pepper. Remove from heat and keep warm.

Step four

Season the ground beef generously with salt and pepper and form into 8 thin patties. Heat a large skillet over medium-high heat and cook the patties for 2 to 3 minutes per side, until browned and cooked through.

Step five

Place the cooked patties on toasted slider buns and top with warm green chili queso, guacamole, and crispy onion straws. Serve immediately.
