Southern Stewed Tomatoes and Okra

This is the perfect side dish for your next backyard BBQ!  Red Gold Petite Diced Tomatoes and Tomato Paste create lots of flavor and freshness to this easy dish.    @kellycookstexas   @thefeedfeed

Ingredients

  • 4-6 slices of bacon, cut into lardons
  • 1/2 white onion, diced
  • 4-6 garlic cloves, minced
  • 2 cans Red Gold® Petite Diced Tomatoes 14.5 oz
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons chicken bouillon
  • 1 can Red Gold® Sweet Basil Tomato Paste 6 oz, or Red Gold Roasted Garlic Tomato Paste 6 oz

  • 2 1/4 cups of water
  • 1 dried bay leaf
  • 1 1/2 teaspoons Cajun or creole seasoning
  • 1 tablespoon red wine vinegar

Instructions

Step one

Using a Dutch oven or large pot, cook bacon over medium heat until crispy.  Remove bacon and set aside. 

Step two

Sauté onion in bacon grease until tender, then add garlic. Sauté for 3-4 more minutes.

Step three

Add Red Gold Petite Diced Tomatoes, Worcestershire sauce, chicken bouillon, Red Gold Sweet Basil or Roasted Garlic Tomato Paste, water, bay leaf, and Creole/Cajun seasoning.  Stir to combine.

Step four

Bring to a simmer, turn to medium low heat, cover and cook for 10-15 minutes; stirring occasionally. 

Step five

Add okra and stir, bring back to a simmer and cook uncovered until tender, approximately 10 minutes.

Step six

Remove bay leaf and add cooked bacon and vinegar, stir to combine.  Remove from heat and season to taste.
