Smothered Chicken with Red Pepper Sauce

A super easy spicy sauce that pairs perfectly with chicken, using Red Gold Original Diced Tomatoes + Green Chilies.  @lisathompson 

Ingredients

  • 2 pounds boneless skinless chicken breast
  • 1/2 teaspoon kosher salt + salt to taste
  • 1/4 cup olive oil
  • 8 ounces roasted red peppers
  • 1 can Red Gold Original Diced Tomatoes + Green Chilies 10 oz

  • 1 shallot, peeled, trimmed and roughly chopped
  • 4 garlic cloves, peeled
  • cooked couscous or rice, for serving
  • chopped cilantro or parsley, for garnish

Instructions

Step one

Preheat over to 400°F.  Pat chicken dry with paper towels, then season with salt to taste.

Step two

Heat a drizzle of olive oil over medium-high heat. Sear chicken for about 5 minutes.  Flip and cook for an additional 5 minutes.

Step three

Meanwhile, add roasted red peppers, Red Gold Original Diced + Green Chilies, shallot, garlic, olive oil and salt into a blender and blend until smooth.  Pour sauce over seared chicken, then transfer to the oven for 15-20 minutes.

Step four

Serve chicken over couscous or rice with a sprinkle of cilantro or parsley and enjoy!
