Ingredients
- POTATO SALAD
- 10 ounces frozen tater tots
- 1 large cucumber, diced
1 can Red Gold Canned Original Diced Tomatoes + Green Chilies 10 oz, drained
1 can Red Gold Canned Diced Tomatoes 14.5 oz, drained
- 1/2 cup fresh basil, chopped
- 1 small red onion, diced
- 1 can whole kernel corn, 8.75 ounce, drained
- BALSAMIC GLAZE DRESSING
- 3 tablespoons extra virgin olive oil
- 1 tablespoon Dijon mustard
- 2 tablespoons balsamic vinegar
- 1 tablespoon sugar
- kosher salt, to taste
- freshly ground black pepper, to taste
Instructions
Step one
Preheat oven to 425°F. Add tater tots to a nonstick baking tray, spacing them apart. Bake in the oven for 8-10 minutes.
Step two
Take out of the oven and use a flat glass cup to mash the tater tots. Put them back in the oven, bake for 15-20 minutes more until golden and crispy.
Step three
In a serving bowl, add cucumbers, tomatoes, basil, onion and corn.
Step four
In a separate bowl make dressing by mixing oil, Dijon mustard, balsamic vinegar, sugar, salt and pepper.
Step five
Pour the dressing over the salad and mix well. Add crispy tater tots right before serving.
