Smash Burger Quesadilla

Burgers are a quintessential summer meal, but have you ever tried one on a quesadilla? These Smash Burger Quesadillas are a play on the viral Smash Burger Tacos and incorporate all of the flavors you’d find on a burger. From a homemade fry sauce to toppings galore, it’s a meal the whole family is sure to love!   @taylorjackzen   @thefeedfeed

Ingredients

  • 1/4 cup mayonnaise
  • 1/4 cup Red Gold® 32 oz Ketchup Folds of Honor

  • 1 1/2 teaspoons dill pickle juice
  • 1/2 teaspoon yellow mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • kosher salt, to taste
  • fresh ground pepper , to taste
  • 1 pound ground beef
  • garlic powder, to taste
  • onion powder, to taste
  • kosher salt, to taste
  • freshly ground pepper, to taste
  • 1 package flour tortillas, 8 count
  • 2 tablespoons olive oil
  • 8 oz shredded cheddar cheese
  • diced tomatoes, for topping
  • diced onion, for topping
  • chopped lettuce, for topping
  • chopped dill pickles, for topping

Instructions

Step one

For the fry sauce, in a small bowl, combine mayonnaise, ketchup, pickle juice, mustard, garlic powder, onion powder, salt & pepper. Mix well until smooth. Adjust seasoning according to taste, set aside.

Step two

For the quesadillas, mix together ground beef, garlic powder, onion powder and salt & pepper.

Step three

Take a handful of the beef mixture (about 1/4 cup) and evenly spread it over the tortillas, ensuring it reaches the edges.

Step four

Preheat a griddle or skillet to 350°F.

Step five

Drizzle olive oil onto the pan then sear the quesadillas with the meat side down for about 5 minutes.  Flip them over, top with a sprinkle of cheddar cheese and another tortilla.  Sear for an additional 4 minutes.

Step six

Flip again and sear for about 1 minute to ensure the cheese is melted and the tortilla is browned, then remove from heat.  Repeat this process for all the quesadillas.

Step seven

Serve your quesadillas with tomatoes, onions, lettuce, pickles, and fry sauce on the side for dipping.
