Ingredients
- 1 pound penne pasta, 16 ounces
 - large pinch of salt
 - 2 pounds ground Italian sausage
 - 1 small yellow onion, diced
 2 cans Red Gold® Petite Diced Tomatoes with Green Chilies 14.5 oz
- 1 red bell pepper, julienned
 - 1 yellow bell pepper, julienned
 - 1 orange bell pepper, julienned
 - 1 tablespoon Italian seasoning
 - 1 cup parmesan cheese, plus more for serving
 
Instructions
Step one
Bring a large pot of water to a boil. Add pasta and a large pinch of salt, cook to package instructions.
Step two
Heat a large skillet over medium-high heat and add the sausage. Cook until most of the pink is gone, about 8-9 minutes.
Step three
Add the onion to the skillet and cook for 4 minutes until slightly tender. Add the Red Gold Petite Diced Tomatoes with Green Chilies, sliced peppers, and Italian seasoning. Cook for 10 minutes until the peppers soften. Stir in the pasta and parmesan cheese, then simmer for 5-7 minutes.
Step four
Serve immediately with more parmesan cheese.
