Roast Beef Panini with Roasted Garlic Aioli

Lean roast beef is layered with cheese, onion and red bell peppers, and then toasted to perfection.

Ingredients

  • 10 garlic cloves, roasted and mashed
  • 1/2 cup light mayonnaise
  • 1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Garlic & Olive Oil 14.5 oz, drained

  • 8 ounces shredded roast beef
  • 4 slices Fontina cheese, or mozzarella cheese
  • 8 slices Italian bread, or ciabatta type bread
  • 1 red onion, sliced
  • 1 (6 ounce) jar roasted red bell peppers, drained

Instructions

Step one

Combine roasted garlic cloves, mayonnaise and petite diced tomatoes to make the Roasted Garlic Aioli.

Step two

Assemble the sandwich by placing roast beef on bottom of one slice of bread. Then add cheese, onion, red pepper and top with Roasted Garlic Aioli. Top with slice of bread.

Step three

Spread top and bottom of sandwich with olive oil to coat bread. Place on heated surface of Panini grill. Cook until bread is nicely browned and middle is heated.
