Ingredients
- 2 Tablespoons vegetable oil
- 1 yellow onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 pound ground turkey
- 1 Tablespoon taco seasoning
- 3 cups chicken stock
1/2 cup Red Gold® Canned Petite Diced Tomatoes 14.5 oz
1/2 cup Red Gold® Original Diced Tomatoes + Green Chilies 10 oz
- 1 box pasta, 12 oz
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- Kosher salt and freshly ground pepper, to taste
- 1/2 cup shredded Mexican cheese
Instructions
Step one
Heat oil in large skillet over medium heat, add onion and red bell pepper. Increase heat to high and add ground turkey. Cook until browned, about 8 minutes. Stir in taco seasoning and chicken stock.
Step two
Stir in Red Gold Petite Diced Tomatoes, Red Gold Original Diced Tomatoes + Green Chilies, pasta, corn and black beans. Bring to a boil.
Step three
Reduce heat to simmer and cook for about 15 minutes. Uncover and stir every 2-3 minutes until thickened. Season with salt and pepper to taste.
Step four
Remove from heat and serve with shredded Mexican cheese.
