Ingredients
- 1 tablespoon olive oil
- 1 large yellow onion, chopped
- 4 garlic cloves, minced
3 tablespoons Red Gold® Red Gold Roasted Garlic Tomato Paste 6 oz
1 can Red Gold® Canned Petite Diced Tomatoes 14.5 oz
- 2 cartons chicken broth or bone broth, 32 oz
- 1 cup heavy whipping cream, or sub 1 cup milk + 2 tablespoons arrowroot starch for a lighter option
- 4 teaspoons chopped fresh basil, plus more for garnish
- 2 teaspoons Kosher salt
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1/4 teaspoon crushed red pepper, plus more for garnish
- 8 oz uncooked pasta of choice
- 3 cups fresh baby spinach, roughly chopped
- 2 cups chicken, cooked and shredded
- 8 oz cubed cream cheese, room temperature
- 1/4 cup finely shredded parmesan cheese, plus more for serving
Instructions
Step one
Heat olive oil in a large Dutch oven over medium heat. Add chopped onion and garlic, cooking for 3-4 minutes until softened.
Step two
Stir in Red Gold Roasted Garlic Tomato Paste and cook for about 2 minutes, until it deepens in color.
Step three
Add Red Gold Petite Diced Tomatoes, chicken broth, cream, basil, salt, Italian seasoning, garlic powder, and crushed red pepper. Bring to a boil for about 12 minutes, stirring occasionally.
Step four
Reduce heat to medium-low and add uncooked pasta. Cook for about 7 minutes until pasta is al dente.
Step five
Lower the heat and stir in baby spinach, shredded chicken, cream cheese, and parmesan. Stir until cream cheese and parmesan are melted and chicken is heated through, about 5 minutes.
Step six
Top with extra parmesan, fresh basil and crushed red pepper. Serve warm and enjoy!
