Healthier Creamy Queso

This thick and creamy, spicy and delicious Queso incorporates all the best flavors of tomatoes, jalapeno, spices and cheese to form the perfect dip, while using a healthier alternative to the more commonly used ingredients.  Sweet vine-ripened Red Gold Tomatoes paired with fresh chilies, mixed with chili powder, ground cumin, garlic and cheddar topped with avocado and crumbled Mexican cotija cheese.  It’s easy to make and perfect to dip your tortilla chips into – a quintessential game night appetizer!  @thegreatspoonfeed   @thefeedfeed

Ingredients

  • 1 Tablespoon unsalted butter
  • 3 garlic cloves, minced
  • 1 jalapeno, sliced horizontally, plus more for garnish
  • 1/2 small onion, finely chopped
  • 1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz

  • 1 1/2 cups unsweetened coconut milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Kosher salt and black pepper, to taste
  • 8 ounces shredded yellow cheddar cheese
  • avocado, sliced for garnish
  • Red Gold® Mild Salsa 15.5 oz, for serving

  • guacamole, for serving
  • tortilla chips, for serving

Instructions

Step one

In a saucepan, melt butter over medium heat, add garlic, jalapeno, and onion.  Cook for 1-2 minutes. Add Red Gold Original Diced Tomato + Green Chilies.  Mix and bring to a simmer.

Step two

Slowly add coconut milk while whisking continuously.  Bring to a boil then reduce heat to a simmer. Add chili powder, cumin, and season with salt and pepper.  Mix and allow to cook for 6-7 minutes. Add cheese and mix until melted and dip is smooth.  Remove from heat.

Step three

Garnish with avocado, crumbled cotija cheese, jalapeno, and cilantro.  Serve with Red Gold Salsa, guacamole and tortilla chips.
