Ingredients

  • 1 can refried beans 16 oz
  • 4 ripe avocados
  • juice of 2 limes
  • 1/2 red onion, finely diced (divided)
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 container sour cream 16 oz
  • 1 packet taco seasoning
  • 2–3 tablespoons taco sauce (or to taste)
  • 1 can Red Gold Petite Diced Tomatoes with Green Chilies 14.5 oz, partially drained

  • 1 1/2 cups Mexican blend shredded cheese
  • 1 1/2 cups shredded lettuce, washed and dried
  • 2 fresh tomatoes, diced
  • Tortilla chips, for serving

Instructions

Step one

Choose a clear glass serving dish. For even layers, aim for each layer to be about 1/2 inch thick rather than measuring exact quantities.

Step two

Spread the refried beans evenly across the bottom of the dish.

Step three

In a bowl, mash the avocados with lime juice, half of the diced red onion, cilantro, salt, and pepper. Spread the guacamole evenly over the beans.

Step four

In a separate bowl, mix sour cream with taco seasoning and taco sauce until smooth. Spread over the guacamole layer.

Step five

Spoon the partially drained Red Gold Petite Tomatoes with Green Chilies evenly over the sour cream.

Step six

Sprinkle shredded Mexican blend cheese over the tomato layer. Add a layer of shredded lettuce.

Step seven

Finish with diced fresh tomatoes, remaining red onion, and additional cilantro. Serve immediately with tortilla chips.
