

With very few ingredients, this rich, creamy tomato soup is fast! Our favorite way to enjoy is with a gooey Gruyere & Cheddar Grilled Cheese sandwich!
Ingredients
1 can Red Gold® Canned Crushed Tomatoes 28 oz OR
2 cans Red Gold® Canned Crushed Tomatoes 15 oz
- 1 (14.5 ounce) can chicken broth
- 1/4 cup chopped fresh basil
- 1 teaspoon salt
- 2 teaspoon sugar
- 1/2 cup whipping cream
- 1/4 cup butter
- 2 tablespoons butter
- 8 slices of whole grain bread, or bread of choice
- 4 slices Gruyere cheese
- 4 slices Cheddar cheese
Instructions
Step one
In a soup kettle, bring the crushed tomatoes and broth to a boil. Reduce heat; cover and simmer for 10 minutes.
Step two
Add basil, salt and sugar. Reduce heat to low, stir in cream and butter. Cook until butter is melted.
Step three
Melt 2 tablespoons butter in a non-stick skillet, over medium heat. Arrange 8 slices of bread for assembly of sandwiches. Top 4 slices of bread with 1 slice of gruyere cheese, 1 slice of cheddar cheese and top with remaining slices of bread. Place assembled sandwiches into the melted butter. Brown completely on one side and then turn and grill on second side, may need to add more butter. This method gives a better overall browning of the bread.
Step four
Cut sandwiches in half and serve alongside the tomato soup.
