Ingredients
- 1/2 pound burrata
- 1/2 cup heavy cream
- 1/2 pound short-cut pasta
- 2 tablespoons olive oil
- 1/2 pound Italian sausage, casings removed
- 1 medium onion, diced
- 1 red pepper, diced
1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz
- salt & pepper to taste
- red pepper flakes, for serving
Instructions
Step one
Tear burrata into a few pieces and add to the food processor. Add cream and pulse 10 seconds at a time on low until the texture is whipped and creamy. Set aside for now.
Step two
Cook pasta according to the directions on the package.
Step three
Meanwhile, heat olive oil over medium heat in a large skillet. Add sausage and stir occasionally until cooked through (6-7 minutes). Break up the sausage with the back of a spoon as it cooks.
Step four
Add onion and red pepper. Stir occasionally until softened, 5-6 minutes.
Step five
Pour in Red Gold Original Diced Tomatoes + Green Chilies. Heat until most of the liquid has evaporated. Add salt and pepper to taste.
Step six
Reduce heat to low and add cooked pasta and whipped burrata to the skillet. Gently toss the pasta until the sauce is creamy and most of the burrata has melted.
Step seven
Serve immediately with red pepper flakes sprinkled on top. Enjoy!
