This Cowboy Caviar is a refreshing and colorful dip that combines the hearty textures of beans, corn, Red Gold Diced Tomatoes, peppers and onions.  This versatile dish can be served with tortilla chips as a crowd-pleasing appetizer, or as a bright and healthy side to complement grilled meats, or as a topping for salads. Ingredients

  • 1/2 cup olive oil
  • 3 tablespoons honey
  • 1/4 cup apple cider vinegar
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 can black beans, 15 oz, rinsed and drained
  • 1 can black-eyed peas, 15 oz, rinsed and drained
  • 1 can sweet corn, 15 oz, drained
  • 1 red onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 yellow pepper, seeded and diced
  • 1 can Red Gold Canned Diced Tomatoes 14.5 oz, drained

  • 1 jalapeno, seeded and diced
  • 2 tablespoons fresh cilantro, chopped

Instructions

Step one

In a small bowl, whisk together the olive oil, honey, apple cider vinegar, chili powder, garlic powder and salt. Set the dressing aside. 

Step two

In a large bowl, combine the black beans, black-eyed peas, corn, red onion, red and yellow bell peppers, tomatoes and jalapeno.

Step three

Pour the prepared dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated.

Step four

Sprinkle the chopped cilantro over the top and toss again.

Step five

Serve with tortilla chips or as a vibrant side dish to grilled meats or fish.
