Ingredients
- 2 cups oil, for frying
- 8-10 corn tortillas
- 1 tablespoon olive oil
- 1-1 1/2 pounds lean ground beef
1 can Red Gold Original Diced Tomatoes + Green Chilies 10 oz, drained
1 tablespoon Red Gold Roasted Garlic Tomato Paste 6 oz
- 4 chipotles in adobo sauce, chopped
- 1 tablespoon taco seasoning
- salt and pepper, to taste
- 1/3 cup fresh cilantro, chopped
- shredded lettuce, for topping
- diced tomatoes, for topping
- shredded Mexican blend cheese, for topping
- guacamole, for topping
Instructions
Step one
Heat a large saucepan over medium-high heat with the frying oil. Once hot, use stainless steel tongs to place the corn tortillas in the frying oil and bend them into a taco shape. Fry for about 2-3 minutes, working with 1-2 tortillas at a time.
Step two
Once crispy and deeply golden, remove from the oil and place on a paper towel-lined baking rack to drain excess oil.
Step three
In a large skillet over medium-high heat, add the olive oil.
Step four
After a minute, add the ground beef and break it up with a spatula. Cook until browned, about 6-8 minutes.
Step five
Stir in the drained Red Gold Original Diced Tomatoes + Green Chilies and Red Gold Roasted Garlic Tomato Paste.
Step six
Add the chopped chipotles and taco seasoning. Cook for another 2-3 minutes. Season with salt and black pepper to taste. Stir in the chopped cilantro and set aside.
Step seven
Serve the chipotle beef in the crispy hard-shell tacos with your favorite taco toppings.
