Chili With a Twist

Bump your chili recipe up a notch!  Using Red Gold Diced Tomatoes, Bush’s Chili Beans and served with Mission Tortilla Strips, this chili will become a new family favorite.  Two chipotle chilis in adobo sauce cause a flavor explosion, giving this recipe a tasty twist!

Ingredients

  • 1 pound ground beef
  • 1 tablespoon unsalted butter
  • 1 large onion, chopped
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1/2 tablespoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 garlic cloves, minced
  • 1 cup beef broth, low sodium
  • 1 green bell pepper, chopped
  • 1 can Red Gold® Diced Tomatoes 14.5 oz
  • 1 can Red Gold® Tomato Paste 6 oz
  • 1 tablespoon brown sugar
  • 2 chipotle chilis in adobo sauce, diced (about 2 tablespoons)
  • 1 can Bush’s Pinto Beans-Mild Chili Sauce 16 oz, undrained
  • 1 can Bush’s Kidney Beans-Mild Chili Sauce 16 oz, undrained
  • Mission Tortilla Strips, topping
  • cheddar cheese, optional
  • sour cream, optional
  • sliced avocado, optional
  • chopped green onions, optional

Instructions

Step one

Heat a Dutch oven or large pot on the stove top over medium-high heat. Add ground beef and cook until browned, about 8-10 minutes. Once cooked, drain meat and reserve in separate bowl.

Step two

Add butter to Dutch oven or pot to melt. Add the onions and cook for at least 10 minutes, until they start to get brown and caramelized, stirring every couple of minutes.

Step three

Add the spices (cumin, chili powder, paprika, salt and pepper) and chopped garlic and cook for an additional minute.

Step four

Deglaze the pot with about ¼ cup of beef broth. Add green peppers and cook until tender, about 5 minutes.

Step five

Return the ground beef to the pot along with the remaining ingredients (remaining beef broth, Red Gold® Diced Tomatoes, Red Gold® Tomato Paste, brown sugar, chipotle chilies in adobo, and both cans of Bush’s® Chili Beans.)

Step six

Bring to a boil then reduce heat to a low simmer and cook for 30-40 minutes, partly covered. 

Step seven

Spoon into a bowl and add a handful of Mission Tortilla Strips on top.  

Step eight

Serve with cheese, sour cream, sliced avocado and chopped green onions.
