Chicken Tostadas

Whether you want a simple Chicken Tostada or you really want to load them up, this recipe is delicious! Perfect for Cinco de Mayo with friends or family or any night you have a craving for bold Mexican flavors. If you want to just enjoy the shredded chicken and beans in a hard or soft taco or enjoy on its own, that works. The seasoned chicken cooked in the tomatoes and their liquid give the chicken amazing flavor.   @soufflebombay  @thefeedfeed

Ingredients

  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1 1/2 pounds boneless chicken breast or thighs
  • 3/4 cup sweet onion, chopped
  • 1 can Red Gold® Canned Petite Diced Tomatoes 14.5 oz

  • 1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz

  • 3/4 cup chicken stock
  • 1 can black beans, 10 oz, drained and rinsed
  • juice from 1/2 a lime
  • toasted or fried flour tortillas (fajita size), for assembling

Instructions

Step one

Combine spices to make the seasoning and use half to season chicken breasts.

Step two

Place chicken in your Instant Pot, Ninja Foodie, or pressure cooker.  If it has sauté mode, sauté your onions for a couple of minutes, then add your chicken and sauté on each side for a minute.  If it does not, you can skip this step.

Step three

Add both cans of tomatoes, chicken stock and remaining spice mixture to the pot and set pressure for 10 minutes.  Typically it takes about 10 minutes to come up to pressure.

Step four

Carefully release pressure when finished, remove lid and add in the beans and lime juice.  Stir to combine.

Step five

When ready, assemble your tostadas, first spread guacamole (or smashed avocado) onto your crisped up tortillas, top with some of the shredded chicken followed by cheese(s), cilantro, lettuce, etc and enjoy!
