Chicken Tacos with Black Beans

Super easy chicken tacos with only 5 ingredients!  You can’t go wrong with Red Gold Petite Diced Tomatoes, Bush’s Black Beans, and Mission Tortillas to make this tasty yet simple Mexican dish.  Works great as an entrée, but can also be whipped up as an appetizer for Taco Tuesday as well!

Ingredients

  • 1 can Red Gold Canned Petite Diced Tomatoes 14.5 oz, drained

  • 2 (15 ounce) cans Bush’s Black Beans
  • 1 (14.75 ounce) canned corn, drained
  • 1 (22 ounce) package chicken breasts, grilled and fully cooked
  • 1 (10 count) pkg Mission Soft Taco Flour Tortillas, (corn tortillas can be substituted)

Instructions

Step one

In a large bowl, mix can of drained Red Gold Petite Diced Tomatoes, Bush’s Black Beans, and drained corn.  Refrigerate for 15 minutes. 

Step two

Follow package directions to fully reheat cooked chicken strips.

Step three

Warm one Mission Flour Tortilla in a pan on medium heat for 1 minute per side or until warm throughout.  TIP: Stack and wrap tortillas in paper towels until all are heated.

Step four

Add grilled chicken strips to each tortilla and top with 1/4 cup of the tomato/bean mixture.

Step five

Warm remaining Bush’s Black Beans and serve on the side.

Step six

Garnish with Red Gold Salsa.
