A classic Italian dish with chicken, onions, mushrooms and bell pepper combined with crushed tomatoes all in one pan for a perfect weeknight meal.
Ingredients
- 1 whole chicken, cut into pieces or legs and thighs
- 1 teaspoon extra virgin olive oil
- 1/4 cup chopped green onions
2 cans Red Gold® Canned Crushed Tomatoes 15 oz
- OR
1 can Red Gold® Canned Crushed Tomatoes 28 oz
- 2 cups sliced fresh mushrooms
- 1 medium green bell pepper, chopped
- 2 garlic cloves, minced
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
Instructions
Step one
Using a 10 inch skillet, lightly brown chicken pieces in oil over medium heat. Remove the chicken. In the same pan, cook the green onions until tender.
Step two
Add crushed tomatoes, mushrooms, green bell pepper, garlic, black pepper and oregano. Stir to blend.
Step three
Return chicken pieces to skillet and simmer, covered for 30 to 40 minutes. Serve over cooked vermicelli or spaghetti.
