Chicken Burrito Bowl

Make a chicken burrito bowl at home using this easy slow cooker recipe. With black beans, corn and rice, it makes a filling weeknight meal.

Ingredients

  • 1 can Red Gold® Canned Petite Diced Tomatoes 14.5 oz

  • 1 (15 ounce) can Bush’s Black Beans, rinsed and drained
  • 1 (14.5 ounce) can whole kernel corn, drained
  • 1 (14.5 ounce) can chicken broth
  • Salt and black pepper to taste
  • 3 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 1/2 pounds chicken tenders
  • cooked white rice
  • 1 (4 ounce) can green chilies
  • Red Gold® Medium Salsa 15.5 oz

  • Red Gold® Mild Salsa 15.5 oz

  • cilantro, chopped
  • avocado, sliced
  • lime wedges
  • Mission Tortilla Strips

Instructions

Step one

Combine Red Gold Petite Diced Tomatoes, Bush’s Black Beans, corn, chicken broth, salt, black pepper, green onions, garlic powder and cumin in slow cooker. Season chicken with salt and lay on top.

Step two

Cook on LOW for 6 to 7 hours or on HIGH for 4 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir to combine.

Step three

Serve over rice and garnish with Red Gold Salsa, chopped cilantro, lime wedges, avocado slices and enjoy with Mission Tortilla Strips. 

Step four

Option: Add chopped romaine lettuce to make it more like a bowl.
