Cheesy Garlic Bread with Tomatoes and Chilies

Ingredients

  • 1 head of garlic
  • 3 tablespoons neutral oil
  • 6 tablespoons softened butter, unsalted
  • 1 can Red Gold Mild Diced Tomatoes + Green Chilies 10 oz

  • Kosher salt, to taste
  • 1 tablespoon fresh chopped parsley
  • 1 loaf of Italian bread
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

Step one – Roast the Garlic

Preheat oven to 400°F.  Remove the papery outer layers of the garlic bulb. Cut 1/4-1/2 inch off the top to expose the cloves.

Step two

Place garlic on foil or in a small ramekin, drizzle with oil, cover and bake for 30-40 minutes, or until garlic is soft and golden.

Step one – Prepare Garlic Butter Mixture

Squeeze the roasted garlic cloves into a bowl.

Step two

Add softened butter, drained Red Gold Mild Diced Tomatoes + Green Chilies, salt and parsley. Mix until smooth.

Step one – Assembly

Slice the Italian bread loaf in half lengthwise. Spread the garlic butter mixture evenly over each bread half. Sprinkle shredded cheese generously on top of garlic butter.

Step two

Place bread on a baking sheet, cut side up, and bake at 400°F for 10-12 minutes, or until cheese is melted and bread is toasted. Broil for an additional 1 minute for extra golden-brown color.
