Ingredients
- 1 tablespoon olive oil
- 2 cups shredded cooked chicken, use rotisserie for convenience
- 1 teaspoon Italian seasoning
1 can Red Gold® Sweet Basil Tomato Paste 6 oz
- 3 cups low-sodium chicken or vegetable broth
- 1 pound uncooked gnocchi
- 1 bay leaf
- Kosher salt to taste
- freshly ground black pepper to taste
- 5 oz fresh mozzarella, torn into pieces
- fresh parsley or basil, chopped to garnish
Instructions
Step one
Preheat broiler and position an oven rack 8 inches below the heat source.
Step two
Heat olive oil in a large skillet over medium heat. Add shredded chicken and Italian seasoning, cooking until fragrant and lightly browned.
Step three
Stir in Red Gold Sweet Basil Tomato Paste until chicken is fully coated. Gradually add the broth, stirring occasionally. Bring to a simmer.
