Ingredients

  • FOR THE CHILI
  • 1 pound hot Italian chicken sausage, casings removed
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 ribs celery, diced
  • 2 medium carrots, diced
  • 4–5 garlic cloves, minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon celery seed (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill or parsley (optional)
  • Pinch of chili flakes or cayenne (optional, for extra heat)
  • 1/4 cup lager or pilsner beer (optional), for deglazing
  • 2 Red Gold Chili Ready Canned Diced Tomatoes 14.5oz

  • 2 cans cannellini or pinto beans, drained and rinsed 15 oz
  • 4 cups low-sodium chicken broth (less for thick chili, more for looser texture)
  • 1/2 cup buffalo or hot sauce, adjusted to taste
  • 1/2 cup cream cheese, softened
  • ½–1 cup sharp cheddar, freshly shredded
  • Juice of ½ lemon or lime
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup corn kernels (charred if possible), optional
  • fresh parsley or dill, optional
  • OPTIONAL TOPPINGS
  • Crumbled blue cheese
  • Green onions or chives
  • Pickled jalapeños or red onions
  • Crushed tortilla chips
  • Sharp cheddar cheese

Instructions

Step one

In a large pot or Dutch oven, heat olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and caramelized, about 6–8 minutes. Transfer to a plate.

Step two

In the same pot, sauté the onion, celery, and carrots with a pinch of salt and pepper for about 5 minutes, until softened. Add garlic, smoked paprika, celery seed (if using), garlic powder, onion powder, dried dill or parsley (if using), and chili flakes or cayenne (if using). Cook for 1 minute, stirring until fragrant.

Step three

Deglaze with beer, scraping up any browned bits, and let it reduce slightly.

Step four

Stir in the Red Gold Diced Tomatoes, beans, chicken broth, and buffalo sauce. Return the sausage to the pot and bring to a boil. Reduce the heat and simmer for 20 minutes.

Step five

Lower the heat and stir in the cream cheese and cheddar until melted and smooth. Taste and adjust seasoning.
