Breakfast Casserole

All of your favorite breakfast dishes in one delicious casserole. Hash browns, eggs, bacon, bell pepper, onions and of course, tomatoes. A great dish to make for when you have company, make it the night before and pop in the oven for the hungry breakfast crowd.

Ingredients

  • 1 pound bacon, cut into pieces or 1 pound of sausage
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 (32 ounce) bag frozen southern style hash browns
  • 8 eggs, beaten
  • 6 slices bread, torn into bite size pieces
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 can Red Gold Canned Petite Diced Tomatoes 14.5 oz

Instructions

Step one

Cook bacon until brown. Add green bell pepper, onion and hash browns; cook and stir until browned.

Step two

In mixing bowl combine eggs, bread, cheese, milk and petite diced tomatoes. Add browned meat mixture and pour into greased 9×13 inch baking dish. Cover and refrigerator casserole overnight.

Step three

Preheat oven to 350° F

Step four

Bake casserole, uncovered, for 25 to 30 minutes or until lightly brown and bubbly.
