Blender Salsa

This is the perfect recipe for when you need salsa ASAP. It all comes together in a blender and is full of bright flavors, perfect for a quick get together or an emergency snack. We used Red Gold Whole Peeled Tomatoes to make the process even easier and more delicious!  @katie.melodie  @thefeedfeed

Ingredients

  • 2 cans Red Gold Canned Whole Peeled Tomatoes 28 oz, drained

  • 2 teaspoons canola oil
  • 1 white onion, quartered
  • 1 jalapeno, halved
  • 2 garlic cloves
  • juice of 1 lime
  • 1 bunch of fresh cilantro, 2 tablespoons reserved for garnish
  • salt to taste
  • tortilla chips, for serving

Instructions

Step one

Drain the cans of Red Gold Whole Peeled Tomatoes and place the tomatoes in the blender.

Step two

In a skillet over medium-high heat, warm up the canola oil.  Sear the onion, jalapeno, and garlic on all sides until golden.  Add the vegetables to the blender. 

Step three

Add the juice of one lime to the blender, reserve about 2 tablespoons of cilantro for serving and add the rest of the bunch to the blender, stems included.  Cover and blend for 1 minute.  Use a tortilla chip to taste for seasoning, add salt, and blend again for one minute.

Step four

Pour into a bowl, top the salsa with chopped cilantro, and serve with tortilla chips.  Enjoy!
