Black Beans Tortilla Chili

Made with flavorful Bush’s Black Beans, vine-ripe Red Gold Tomatoes and corn, this easy tortilla chili recipe can be made in about 30 minutes!

Ingredients

  • 1 Tablespoon olive oil
  • 2 medium onions, chopped
  • 1 large red bell pepper, chopped
  • 4 garlic cloves, chopped
  • 1 can of corn 15 ounce, drained
  • 2 Tablespoons chili powder
  • 1 1/2 Teaspoons dried oregano
  • 1 1/2 Teaspoon ground cumin
  • 1/4-1/2 Teaspoon cayenne pepper
  • 1 can Bush’s Black Beans 15 oz, drained
  • 1 can Red Gold Canned Petite Diced Tomatoes 14.5 oz

  • 1 can Red Gold Canned Tomato Sauce 15 oz

  • Salt & Pepper, to taste
  • Mission Tortilla Strips, crumbled

Instructions

Step one

Heat oil in a 2-quart saucepan over medium-high heat.

Step two

Add onion, pepper, garlic, corn and seasonings. Cook 4 minutes, stir often. Add Bush’s Black Beans, Red Gold Petite Diced Tomatoes and Red Gold Tomato Sauce.

Step three

Season with salt and pepper to taste.

Step four

Simmer 20 minutes.

Step five

Serve with crumbled Mission Tortilla Strips. 

Step six

Garnish with optional toppings: cheese, green onions, sour cream, and cilantro
