Big Potato Rings

A fun twist on traditional French fries! Perfect for summer parties or casual get-togethers because these potatoes are going to be a crowd-pleaser. They can be enjoyed as a tasty appetizer or paired with your favorite grilled dishes.   @fationatefoodbelly   @thefeedfeed

Ingredients

  • 2 potatoes, medium sized
  • water for boiling
  • 4 tablespoons cornstarch
  • 2 tablespoons mozzarella cheese
  • kosher salt to taste
  • neutral oil, for frying
  • Red Gold 32 oz Ketchup Folds of Honor, for serving

Instructions

Step one

Peel the potatoes and bring a pot of water to a boil. Boil the potatoes over medium heat for 15-20 minutes until they are easily pierced with a fork or chopstick. Drain the potatoes and transfer them to a bowl, mash the potatoes until smooth.

Step two

Add cornstarch, mozzarella cheese, and salt to the mashed potatoes, mixing until a dough forms.

Step three

Scoop the mashed potatoes into a Ziploc bag and snip off the corner of the bag.  Squeezing the bag, evenly spread the mixture onto a work surface to create strips.  Take two strips and connect both ends together to form a ring shape. 

Step four

Fry the potato rings until golden and crispy. Serve with a side of Red Gold Folds of Honor Ketchup for dipping.
