These homemade Beef Empanadas are a delicious way to bring the family together for a quality meal made with care. Ingredients

  • 1/2 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 can Red Gold® Mild Diced Tomatoes + Green Chilies 10 oz, drained well

  • 2 tablespoons Red Gold® Tomato Paste 6 oz
  • 2 refrigerated pie crusts
  • 1 cup shredded cheese, (cheddar, Monterey Jack or Mexican blend)
  • 1 large egg, beaten for egg wash

Instructions

Step one

In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up as it cooks.

Step two

Stir in the taco seasoning, Red Gold Mild Diced Tomatoes + Green Chilies, and Red Gold Tomato Paste until well combined. Let the mixture cook for another 2-3 minutes, then remove from heat.

Step three

Roll out the refrigerated pie crusts and cut them into small circles (about 4-5 inches in diameter).

Step four

Place 1 tablespoon of the beef mixture onto each dough round, then top with shredded cheese. Fold the dough over and pinch the edges shut using a fork to seal.

Step five

Place the empanadas on a lined baking sheet and brush the tops with egg wash for a golden finish.

Step six

Bake at 400°F for 20-25 minutes or until golden brown.

Step seven

Let cool slightly, then serve with guacamole, queso, or your favorite dip.
