

This is one of those meals you can make anytime – you probably have all of the ingredients in your pantry! A super simple dish that has plenty of flavor with bacon, onion, garlic, petite diced tomatoes and pasta – all ready in 30 minutes.
Ingredients
- 4 slices bacon, cut into 1 inch pieces
- 1 large onion, finely chopped
- 3 garlic cloves, chopped
2 cans Red Gold Canned Petite Diced Tomatoes 14.5 oz, drained
- OR
1 can Red Gold Canned Petite Diced Tomatoes 28 oz, drained
- 2 1/2 cups of chicken stock
- 3 cups bow ties pasta, uncooked
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/3 cup grated parmesan cheese
Instructions
Step one
In a large (10″) skillet, cook bacon over medium-high heat for 8 to 10 minutes or until brown and crispy. Remove bacon from pan and drain on paper towels, reserving 1 tablespoon of bacon fat. Reduce heat to medium and add onion and garlic to the tablespoon of reserved bacon drippings in the skillet. Cook 5 minutes until onion is tender, stirring frequently.
Step two
To the skillet add the pasta, top with the diced tomatoes, half the cooked reserved bacon, salt, black pepper and chicken broth. Cook 13-15 minutes, or until pasta is tender and mixture is desired consistency. Top with remaining bacon and grated parmesan cheese before serving.
