

A sweet and spicy Asian-style Sloppy Joe sandwich made with lentils, cooked in a flavorful homemade sauce that comes together in 20 minutes! Ingredients
- 3 1/2 cups cooked brown lentils
- 2 tablespoons olive oil
- 1 small yellow onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 teaspoon garlic, grated or minced
- 2 teaspoons fresh ginger, grated
1 can Red Gold Mild Diced Tomatoes + Green Chilies 10 oz
2 tablespoons Red Gold Roasted Garlic Tomato Paste 6 oz
- 1/4 cup shoyu or soy sauce
- 2 tablespoons sweet chili sauce
- 1/4 cup dark brown sugar
- 1/2 teaspoon toasted sesame oil
- SLAW
- 1 bag slaw mix, 8 oz
- 1 teaspoon granulated sugar
- 1 tablespoon rice vinegar
- 1/2 teaspoon kosher salt, to taste
- 1 tablespoon chili crunch, to taste
- 1/4 cup fresh chopped herbs, such as cilantro, mint or basil (optional)
- 8 brioche buns
- mayonnaise, for topping, optional
- prepared slaw, for topping
Instructions
Step one
Prepare lentils as instructed on the package or rinse and drain if using pre-cooked lentils, set aside.
Step two
Heat olive oil in a large skillet. Add chopped onion and red bell pepper. Sauté for a few minutes until the onion is translucent.
Step three
Add garlic and ginger, cook for another 1-2 minutes.
Step four
Add Red Gold Mild Diced Tomatoes + Green Chilies, Red Gold Roasted Garlic Tomato Paste, shoyu, sweet chili sauce, brown sugar, and sesame oil. Simmer covered for 5 minutes, then add lentils.
Step five
Simmer for another 3-5 minutes until the Sloppy Joe mixture comes together and the flavors have melded. Adjust seasoning to taste.
Step six
Mix together the ingredients for the slaw and adjust seasoning as necessary.
Step seven
Assemble Sloppy Joes on brioche buns with the prepared slaw and optional mayonnaise.
