Ingredients

  • FOR THE MEATBALLS
  • 1 pound ground beef
  • 1/2 yellow onion, chopped
  • 1 large egg
  • 1 tablespoon Red Gold Roasted Garlic Tomato Paste 6 oz

  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • kosher salt and pepper to taste
  • FOR THE BOWLS
  • 1 large russet potato, cut into 1/2 inch strips
  • 1 1/2 teaspoons olive oil
  • kosher salt and black pepper to taste
  • 6 cups romaine lettuce, about 1 1/2 cups per bowl
  • 2 diced roma tomatoes
  • 1 cup Colby Jack cheese, shredded
  • FOR THE BURGER SAUCE
  • 1 1/2 tablespoons Red Gold Roasted Garlic Tomato Paste 6 oz

  • 3 tablespoons mustard
  • 1 tablespoon pickles, chopped (or pickle relish)
  • 1 teaspoon brown sugar
  • 2 teaspoons apple cider vinegar
  • splash of water, as needed to thin sauce

Instructions

Step one

Preheat the oven to 375°F and line a baking sheet with foil or a baking rack.

Step two

Make the meatballs: In a large bowl, combine ground beef, chopped onion, egg, Red Gold Roasted Garlic Tomato Paste, breadcrumbs, garlic powder, and onion powder. Mix until just combined—don’t overmix.

Step three

Stuff the meatballs: Form 12 equal portions of the mixture. Flatten each slightly, place a cube of cheese in the center, then roll into a meatball.

Step four

Place meatballs on the prepared sheet and bake for 30 minutes until cooked through and golden.

Step five

Air fry the fries: While meatballs bake, toss potato strips in olive oil, salt, pepper, and garlic powder. Air fry at 400°F for 20 minutes, flipping halfway through, until crispy and golden.

Step six

Make the burger sauce: In a small bowl, combine Red Gold Roasted Garlic Tomato Paste, mustard, pickles, brown sugar, apple cider vinegar, and a splash of water to reach desired consistency. Stir until smooth.

Step seven

Assemble the bowls: In each bowl, layer chopped romaine, crispy fries, diced tomatoes, shredded cheese, 3 meatballs, and a generous drizzle of burger sauce.
