Supreme Pizza Soup

A bold, comforting twist on pizza night—this soup blends Italian sausage, pepperoni, veggies, Red Gold Crushed Tomatoes, and Tuttorosso® Fresh Pizza Sauce for rich, savory flavor in every spoonful.

Ingredients

  • 2 pound Italian sausage
  • 4 cups pepperoni, diced, or sliced pepperoni chopped
  • 4 1/2 cups diced fresh mushrooms
  • 4 cups green bell pepper, diced
  • 4 cups chopped onion
  • 8 cloves minced garlic
  • 11 cups beef broth
  • 1 pizza sauce, #10 Can Tuttorosso® Fresh Pizza Sauce
  • 2 tablespoons dried basil
  • 2 tablespoons dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon crushed red pepper, flakes
  • 1 teaspoon whole fennel seed
  • 1 cup grated Parmesan cheese
  • shredded mozzarella cheese, for garnish
  • garlic bread, or garlic butter croutons, for garnish
  • 3 ½ lbs Red Gold Crushed Ground Tomatoes, (approx. 1/2 pouch)

Instructions

Step one

In a large rondeau, sauté sausage and pepperoni together until sausage is no longer pink. Add mushrooms, green pepper, onion and garlic for 3 to 5 minutes until onions are starting to soften.  Add beef broth, Tuttorosso Fresh Pizza Sauce, Red Gold Crushed Ground Tomatoes, and seasonings. 

Step two

Bring to a boil.  Reduce heat, cover and simmer for 20 minutes, stirring occasionally.  Stir in Parmesan cheese.

Step three

Garnish with shredded mozzarella cheese and garlic bread or garlic butter croutons.
