Roast Beef Panini with Roasted Garlic Aioli

Try this gourmet twist on a deli classic. This is a savory, satisfying sandwich that layers tender roast beef with melted cheese and a zesty roasted garlic aioli. 

Ingredients

  • 80 garlic cloves, roasted and mashed
  • 4 cups light mayonnaise
  • 1 10# can (106 ounces) of Redpack Petite Diced Tomatoes
  • 4 pounds shredded roast beef
  • 32 slices Fontina cheese, or mozzarella cheese
  • 64 slices Italian bread, or ciabatta type bread
  • 8 red onion, sliced
  • 8 (6 ounce) jar roasted red bell peppers, drained

Instructions

Step one

Combine roasted garlic cloves, mayonnaise and Redpack Petite Diced Tomatoes to make the roasted garlic aioli.

Step two

Assemble the sandwich by placing roast beef on bottom of one slice of bread. Then add cheese, onion, red pepper and top with roasted garlic aioli. Top with slice of bread.

Step three

Spread top and bottom of sandwich with olive oil to coat bread. Place on heated surface of panini grill. Cook until bread is nicely browned and middle is heated.
