Shredded chicken, creamy avocado, crisp veggies, and melty cheddar come together on warm flatbread—topped with a zesty Red Gold® Green Chili Aioli for a fresh, Southwest-inspired bite.
Ingredients
- 4 cups light mayonnaise
- Four 28 oz cans of Red Gold® Petite Diced Tomatoes with Green Chilies, drained
- 32 boneless skinless chicken breasts, cooked and shredded
- 8 teaspoon lemon juice
- 8 small red onions, sliced thin
- salt and black pepper to taste
- 32 flat bread
- 8 cups shredded lettuce
- 8 avocados, peeled and diced
- 4 cups sliced cheddar cheese
Instructions
Step one
Combine mayonnaise and tomatoes to make the Green Chili Aioli.
Step two
Place chicken, lemon juice, red onion, salt and black pepper in a large bowl; mix well.
Step three
Place lettuce on flat bread and top with chicken mixture and avocados. Spoon Green Chili Aioli on top.
Step four
Garnish with shredded cheese.
Step five
Serve with fresh fruit for a great lunch or light evening meal.
