A super easy spicy sauce that pairs perfectly with chicken, using Red Gold Tomato Love Sriracha Diced Tomatoes + Red Chilies. @lisathompson @thefeedfeed

2 pounds boneless skinless chicken breast1/2 teaspoon kosher salt + salt to taste1/4 cup olive oil8 ounces roasted red peppers1 can Red Gold Tomato Love® Sriracha Diced Tomatoes + Red Chilies 10 oz1 shallot, peeled, trimmed and roughly chopped4 garlic cloves, peeledcooked couscous or rice, for servingchopped cilantro or parsley, for serving
Instructions
- Preheat over to 400°F. Pat chicken dry with paper towels, then season with salt to taste.
- Heat a drizzle of olive oil over medium-high heat. Sear chicken for about 5 minutes. Flip and cook for an additional 5 minutes.
- Meanwhile, add roasted red peppers, Red Gold Tomato Love Sriracha Diced Tomatoes + Red Chilies, shallot, garlic, olive oil and salt into a blender and blend until smooth. Pour sauce over seared chicken, then transfer to the oven for 15-20 minutes.
- Serve chicken over couscous or rice with a sprinkle of cilantro or parsley and enjoy!
