- Preheat a smoker or oven to 225°F.
- Boil the manicotti shells for about 5 minutes, drain, and slice them down the center to create pockets for the filling.
- In a large bowl, combine the ground beef, cream cheese, shredded mozzarella, 1 tablespoon of Red Gold Sriracha Hot Chili Sauce Ketchup, salt and black pepper. Mix until smooth and well combined.
- Fill each manicotti shell with approximately 3 tablespoons of the beef and cheese mixture. Wrap each stuffed shell with a strip of bacon and season the bacon with BBQ rub.
- Place the wrapped manicotti shells onto the smoker and cook for 1 hour and 15 minutes, or until the internal temperature reached 165°F. Every 15 minutes brush the stuffed shells with the remaining Red Gold Sriracha Hot Chili Sauce Ketchup for extra flavor and a delicious glaze.
