Ingredients

1 Tablespoon unsalted butter3 garlic cloves, minced1 jalapeno, sliced horizontally, plus more for garnish1/2 small onion, finely chopped1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz1 1/2 cups unsweetened coconut milk1 teaspoon chili powder1/2 teaspoon cuminKosher salt and black pepper, to taste8 ounces shredded yellow cheddar cheeseavocado, sliced for garnish Red Gold® Mild Salsa 15.5 oz, for servingcotija cheese, for garnishcilantro, chopped for garnishguacamole, for servingtortilla chips, for serving

Instructions

  • In a saucepan, melt butter over medium heat, add garlic, jalapeno, and onion.  Cook for 1-2 minutes. Add Red Gold Original Diced Tomato + Green Chilies.  Mix and bring to a simmer.
  • Slowly add coconut milk while whisking continuously.  Bring to a boil then reduce heat to a simmer. Add chili powder, cumin, and season with salt and pepper.  Mix and allow to cook for 6-7 minutes. Add cheese and mix until melted and dip is smooth.  Remove from heat.
  • Garnish with avocado, crumbled cotija cheese, jalapeno, and cilantro.  Serve with Red Gold Salsa, guacamole and tortilla chips.
