Ingredients

1 teaspoon kosher salt1/2 teaspoon black pepper1 teaspoon garlic powder1 teaspoon smoked paprika1 teaspoon chili powder1 teaspoon chipotle powder1/2 teaspoon oregano1/2 teaspoon cumin1 1/2 pounds boneless chicken breast or thighs3/4 cup sweet onion, chopped1 can Red Gold® Petite Diced Tomatoes 14.5 oz1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz3/4 cup chicken stock1 can black beans, 10 oz, drained and rinsedjuice from 1/2 a limetoasted or fried flour tortillas (fajita size), for assembling

Instructions

  • Combine spices to make the seasoning and use half to season chicken breasts.
  • Place chicken in your Instant Pot, Ninja Foodie, or pressure cooker.  If it has sauté mode, sauté your onions for a couple of minutes, then add your chicken and sauté on each side for a minute.  If it does not, you can skip this step.
  • Add both cans of tomatoes, chicken stock and remaining spice mixture to the pot and set pressure for 10 minutes.  Typically it takes about 10 minutes to come up to pressure.
  • Carefully release pressure when finished, remove lid and add in the beans and lime juice.  Stir to combine.
  • When ready, assemble your tostadas, first spread guacamole (or smashed avocado) onto your crisped up tortillas, top with some of the shredded chicken followed by cheese(s), cilantro, lettuce, etc and enjoy!

Optional toppings:  guacamole, cheese (such as pepper jack, Monterrey jack, cotija, Mexican blend), grilled or sautéed corn, thinly sliced jalapenos, shredded lettuce, cilantro, sriracha sauce, sour cream.
