Ingredients

12 frozen breaded chicken sliders or tenders1 can Red Gold® Diced Tomatoes Basil, Garlic & Oregano 14.5 oz1 can Red Gold® Mild Diced Tomatoes + Green Chilies 10 oz1 Tablespoon Red Gold® Sweet Basil Tomato Paste 6 oz4 garlic cloves1 teaspoon kosher salt1/2 teaspoon black pepper12 sweet Hawaiian slider rolls12 slices fresh mozzarella cheese2 Tablespoons fresh basil, thinly sliced3 Tablespoons butter, melted1/4 teaspoon garlic powder1 teaspoon fresh parsley, finely chopped1/4 cup parmesan, freshly grated

Instructions

  • Preheat oven to 425°F and cook frozen chicken sliders according to package directions.
  • Meanwhile, make the marinara sauce by adding Red Gold Diced Tomatoes Basil, Garlic & Oregano, Red Gold Mild Diced Tomatoes + Green Chilies, Red Gold Sweet Basil Tomato Paste, garlic, salt, and pepper into a small saucepan.  Simmer for 10 minutes until flavors have combined.  Remove from heat and blend with an immersion blender until smooth.  Season to taste.  
  • Slice the Hawaiian rolls in half carefully through the middle and then separate the top half from the bottom half, place in an oven-safe pan.  Spread about 1/4 cup of the marinara sauce over the bottom half of the rolls.
  • Top with the cooked chicken tenders and then add another 1/4-1/2 cup of the marinara sauce over top of the tenders. 
  • Reduce oven heat to 350°F.  Add fresh mozzarella slices on top of the marinara and then place into the oven to melt the cheese, about 10 minutes.
  • Remove from the oven and sprinkle with fresh basil.  Cover with the top half of the rolls.
  • Mix melted butter, garlic powder, and parsley together and then lightly brush the tops of the rolls.
  • Sprinkle with parmesan cheese and then place into the oven again for another 10-15 minutes until the tops of the rolls are lightly toasted.
  • Remove from the oven and serve with extra marinara sauce.
