Chicken Burrito Bowl
Make a chicken burrito bowl at home using this easy slow cooker recipe. With black beans, corn and rice; it makes a filling weeknight meal.
1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Green Chilies 14.5 oz1 (15 ounce) can black beans, rinsed and drained1 (14.5 ounce) can whole kernel corn, drained1 (14.5 ounce) can chicken brothSalt and black pepper to taste3 green onions, thinly sliced1 teaspoon garlic powder1 teaspoon cumin1 1/2 pounds chicken tenderscooked white rice
GarnishRed Gold® Medium Salsa 15.5 oz or Red Gold® Mild Salsa 15.5 ozcilantro, choppedavocado, slicedlime wedges
- Combine petite diced tomatoes, black beans, corn, chicken broth, salt, black pepper, green onions, garlic powder and cumin in slow cooker. Season chicken with salt and lay on top.
- Cook on LOW for 6 to 7 hours or on HIGH for 4 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir to combine.
- Serve over rice and garnish with salsa, chopped cilantro, lime wedges and avocado slices.
- Option: Add chopped romaine lettuce to make it more like a bowl.
