2 tablespoons extra virgin olive oil1 pound ground turkey, or 1½ cups cubed cooked turkey1 medium onion, chopped1 medium yellow bell pepper, chopped3 garlic cloves, minced2 (15 ounce) cans black beans, rinsed and drained1 (14.5 ounce) can solid-pack pumpkin2 cans Red Gold® Diced Tomatoes 14.5 oz or 1 can Red Gold® Diced Tomatoes 28 oz1 (4 ounce) can diced green chilies, can use more if you like spice2 teaspoons chili powder1/2 teaspoon ground coriander3 cups chicken broth1 1/2 teaspoons each cumin and oreganoSalt and black pepper to taste
Instructions
- In a skillet, heat oil over medium heat. Add turkey, onion, pepper and garlic; cook and stir until tender. Drain well.
- Transfer to slow cooker. Add remaining ingredients and stir to combine. Cook, covered on low for 4 to 5 hours.
- Option: Top with cubed avocado and thinly sliced green onions
