2 potatoes, medium sizedwater for boiling4 tablespoons cornstarch2 tablespoons mozzarella cheese kosher salt to tasteneutral oil, for frying Red Gold® Folds of Honor Ketchup 32 oz, for serving
Instructions
- Peel the potatoes and bring a pot of water to a boil. Boil the potatoes over medium heat for 15-20 minutes until they are easily pierced with a fork or chopstick. Drain the potatoes and transfer them to a bowl, mash the potatoes until smooth.
- Add cornstarch, mozzarella cheese, and salt to the mashed potatoes, mixing until a dough forms.
- Scoop the mashed potatoes into a Ziploc bag and snip off the corner of the bag. Squeezing the bag, evenly spread the mixture onto a work surface to create strips. Take two strips and connect both ends together to form a ring shape.
- Fry the potato rings until golden and crispy. Serve with a side of Red Gold Folds of Honor Ketchup for dipping.
