Mini Meat Loaves

Our Petite Diced Tomatoes make for a moist meatloaf topped with our Mama Selita’s Jalapeno Ketchup! These are perfect for freezing for future meals.

Ingredients

  • 1 pound lean ground beef
  • 1 (6 ounce) package cornbread stuffing mix
  • 1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes 14.5 oz
  • 1/3 cup water
  • 3/4 cup Red Gold® Mama Selita’s Jalapeno Ketchup 20 oz
  • 3/4 cup Red Gold® Folds of Honor Ketchup 32 oz
  • 1 cup shredded cheddar cheese

Instructions

Step one

Preheat oven to 350º F. In a large bowl combine beef, stuffing, tomatoes and water; mix until well blended. Divide evenly into 6 small loaves.

Step two

Grease a mini loaf pan with cooking spray. Place the loaves into the mini loaf pan and push up the sides so you have a well in the center. Place 2 tablespoons of Mama Selita’s Jalapeno Ketchup into the well.

Step three

Bake for 30 minutes. Remove from oven and put 2 to 3 tablespoons of cheese on top of each loaf cup. Place in the oven for 5 more minutes or until the cheese is melted. Remove from loaf pan and serve with mashed potatoes and a green salad for a great dinner idea.
