Chard with Tomatoes, Currants and Pine Nuts

Swiss Chard, one of the most popular vegetables in a Mediterranean kitchen, is also nutritious – second to spinach, and is available throughout the year at most supermarkets. The leafy green is sauteed with salty prosciutto, sweet currants and diced tomatoes for a savory and quick side dish to compliment your favorite chicken, pork or fish entree.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1/4 cup diced prosciutto, about 3 ounces chopped
  • 2 garlic cloves, thinly sliced
  • 2 shallots, chopped
  • 2 bunches red chard, or rainbow chard, cleaned and chopped
  • 1 (28 ounce) can Tuttorosso® Diced Tomatoes 28 oz, drained

  • 3 tablespoons dried currants, or raisins
  • 1 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1/4 cup toasted pine nuts

Instructions

Step one

In a large skillet heat oil; add prosciutto and cook until crisp. Add garlic, shallots and chard; stir to combine. Cook until chard is softened, 3 to 4 minutes.

Step two

Add diced tomatoes, currants, red pepper flakes, salt and black pepper.

Step three

Cook for 4 to 5 minutes until chard is tender.

Step four

Before serving sprinkle with pine nuts.
